Dahi Malai Murgh...to gossip and drinking and laughter!!

I have four recipes for making chicken using black pepper...the first one that you saw is Black Pepper Chicken (the most popular post here)this is the second one...Dahi Malai Murgh or Chicken in Yogurt and Cream sauce...yes, surprise surprise!!!!!! black pepper doesn't feature in the name  and once you make it you will know why...this is my friend RG's favorite curry and she specifically asks for it whenever she comes over because this doesn't have “ other ten thousand spices to confuse me”I love it because I don’t need to make anything else along with it and can focus on all the gossip and drinking and laughter
























Dahi Malai Murgh/Chicken in Yogurt and Cream sauce


Ingredients:

  • Chicken, curry cut, 1 kg 
  • Fresh Cream, ½ cup (can use less or more if you want)
  • Garlic ,paste , 1 tbsp
  • Ginger, paste, 1 tbsp
  • Black pepper powder, 1 tsp (or to taste)
  • Salt, to taste
  • Kasoori Methi/Dried Fenugreek leaves, 2 tbsp
  • Oil, 2 tbsp 

Marination:

  • Thick curd/Yogurt, ¾  cup ( ensure that it is not sour)
  • Black pepper powder, 1 tsp
  • Salt, to taste


Instructions:

Wash and clean chicken, Wipe dry. Make small cuts in the chicken. Mix all ingredients mentioned under marinade in a bowl and add in the chicken. Rub the marinade on the chicken pieces. Cover and let it marinate for a couple of hours in the refrigerator. Bring the chicken back to room temperature before starting cooking.

Heat oil in a heavy bottomed pan. Add the ginger garlic pastes and on low flame fry till  light golden brown .Add in the chicken with the marinade to the pan, mix well and let it fry for 3-4 minutes. Add black pepper powder, stir and cook covered on low flame. Stir every 4 to 5 minutes so that the chicken doesn’t stick to the bottom of the pan. Since this is done on low flame, it take about 30-40 minutes – you will first see a lot of water and oil floating on top, eventually the water will get absorbed, only oil will be left and the colour would change to this nice beige light gold.

Crush kasoori methi with your hands  and add it along with cream and some salt in to the pan. Mix well and continue to cook on low for 5-10 minutes.do a taste check and adjust salt and black pepper. Serve hot with Naan or Parantha.

  3. Hi MM, I was really bored of eating to the point that I stopped eating. I mean, the same recipe of chicken day after day. I am not into cooking much and even if I wish to, my odd work hours wouldn't let me. I have a cook at who comes every morning and makes whatever she can think of. I sleep most of the time when she is cooking. I am Bengali. My cook is Bengali. She presumes I would like the same rice daal aloo-bhaja aloo-posto day after day. But I am sick of it. I had a kg of chicken stacked in my fridge and after coming back from office I thought I should experiment. I found your blog. Thanks you so much. I don't have many things in my kitchen. Just had a bit of curd, pepper and some other masalas and ginger-garlic paste. You recipe saved me. I am cooking it right now. Lets see how it turns out to be. My husband doesn't like pepper much. But, tonight he will have to eat whatever I serve. My brother and I love pepper. I am very selfish when it comes to food. My mother is a great cook and I have always eaten the best in my life. But the last 12 years have been hell. I spent most of the time travelling, away from home, and my mother's cooking. I have bookmarked your blog. Will try out Fennel/Fenugreek Chicken someday. You inspired me to cook again. I used to just after marriage. But now I am so so bored. Thanks again. I think you are doing a great social service for roadsters like me.

Hey Soma, first things first- I envy you – cause when I get bored of eating the same thing I don’t stop I just order in :-) …I hope the chicken turned out to your liking..as for husbands..hah! pls ignore, if mine had his way we would only eating specific dishes every single day…don’t worry about boredom, all of us go through it..I lose my mojo much more often than I admit here..am glad someone as lazy as me was able to get your cooking mojo back…makes me happy enough to do a little jig before and after posting this comment..love and hugs MM
